One Plus One by Jo Jo Moyes

I was home sick with a bad cold and just looking for a good book to read to distract me from my congested head and red nose. I dug up a copy of this old favorite and it was just as delightful upon rereading.

Jess is a single mom and eternal optimist working two minimum wage jobs
just trying to keep her family's heads above water. She's raising her teenage stepson (Nicky) as well as her young math-genius daughter (Tanzie). When Tanzie's teacher tells Jess that Tanzie can get a scholarship to an exclusive school where she could really hone her math skills she's delighted until she realizes how much money she will need for uniforms, registration fees, etc. She unexpectedly  has the chance to "borrow" some money from one of her housecleaning clients, fully intending to pay him back. But it's still not enough. Then Jess hears about a Math Olympiad--with a prize of 5000 pounds--being held in Abderdeen. Which is how Jess, Nicky, Tanzie, their giant dog--and the client (Ed) that Jess took the money from--all end up on a wacky road trip to Scotland.

You just love the character of Jess, who tries so hard to be a good mom and set a positive example.
Ed is a charming love interest, whose own life is kind of falling apart when he gets sucked into the road trip of the century. And both of the kids are unique, well-developed characters that you can't help cheering for. If you're just in the mood for a feel-good book, check out One Plus One.
